Vinification

Mid August harvest to pick grapes with high acidity and low sugar level. Hand picked grapes, reception directly to the pneumatic press with cold technology on reductive environment with controlled temperature at about 16ºC, using very gentle processes under inert atmosphere to preserve all of the aromatic potential of the grapes. The first fermentation takes place on fine lees with regular stirring “battonage.”

Aging

After the second fermentation in the bottle (Classic method) the wines age at Beyra’s winery for 18 months with manual Remouage followed by the “degorgement glacee.” With final maturation in bottle for 3 months after degorgement glacee.

Tasting Notes

Fine and persistent bubbles, has a very fresh aroma—citrus and mineral—with dried fruit hints. In the mouth you feel creaminess in combination with a vibrant acidity from the Síria grape variety.

It’s excellent as an aperitif and goes well with desserts too.
