Vinification

Skin contact in the press to aromatically enrich the wine. After pressing, the clear juice ferments at 14ºC during 30–40 days in stainless tanks, very slowly to keep all the aromas in the wine.

We make batonage twice a week in the barrels to give more volume and complexity to the wine. In January we fining and filter the wines before bottling.

Tasting Notes

Green colour, very aromatic where apple, pear and tropical fruit stand out. In mouth, it’s fresh, mineral, with white, yellow fruit and good structure and volume. In the end, it’s persistent and fresh. Goes well as a starter with seafood and grilled fish.
